Ingredients:
• 2 plain pizza bases (I buy cooked ones from the pizza place down the road - they have tomato on and are ready to go!)
• 6 tbsp tomato paste (if your bases dont already have tomato on them)
• 400g mixed red and yellow tomatoes, diced
option 1:
• 1/2 cup butternut, cooked and chopped into blocks
- sweetcorn - either fresh or out the tin
• 150g mozzarella
• 2 tbsp fresh pesto - mix with a little mayo
• Handful fresh basil leaves or spinach, to serve
option 2: (for the not so adventurous)

1 grated carrot

1 handful baby spinach - finely chopped

150g mozzarella cheese

tinned pineapple (because whats a pizza without pineapple!)

*add cooked chicken or bacon for the meat eaters
Method
- Heat the oven to 180 degrees Celsius. Put each pizza base on a baking sheet and spread each with half of the tomato paste. arrange the ingredients as you feel
- Bake for 15-20 mins or until the top is bubbling and just starting to brown a little. Scatter over the basil leaves before serving.
- we use a pizza stone on the fire for this - in my opinion it tastes better and one should always braai on a Friday evening.
